PB Cornflake Balls

This week's Menu Monday is a fun snack to make in the kitchen with the kids! I snagged a free box of Corn Flakes only to learn that no one in the family likes it. As cereal that is. This recipe will turn any Corn Flakes Hater into a Corn Flakes Lover. It's easy, doesn't take long, and is super yummy! The batch I made was gone within 24 hours!

PB Cornflake Balls

Ingredients

1 Cup of Corn Syrup
1 Cup of Sugar
1 Jar of Peanut Butter
6 Cups of Cornflakes

 Step One: Put cornflakes in a large bowl and set aside. Bring the corn syrup and sugar to a boil in a saucepan over medium/high heat.
Step Two: Remove from heat and stir in peanut butter.
Step Three: Pour mixture over cornflakes 
Step Four: Shape mixture into balls using an ice cream scoop and a spoon. Place balls on wax paper to cool. Send daughter and her friend away with a bowl of the warm mixture while they wait for the PB Cornflake Balls to cool. 
Once they are cool you can eat them all. I had a few chocolate chips in the cupboard that I melted and attempted to drizzle over the top. They were delicious both ways.
